My Baby's Dedication

Sunday we had our sweet baby dedicated at church by his granddaddy and with his cousin, who was born only 2 days before our little man.

My husband and I are Christians and having Jesus Christ as our Lord and Savior has changed our lives forever, now and eternally, and we pray every day that we would be Godly examples to our little boy, so the same might be said by him. When we dedicated our baby to the Lord, we made the commitment to raise him in a Christian home, teach him about Jesus and His Word, and pray that God would work in his heart daily and save him as His child to become a part of his eternal kingdom. There would be no greater joy to us as parents than to know that our child would one day be saved by the Grace of God and spend eternity with Him in Heaven.

We were also very thankful to have so many family members and friends come from near and far to join in the very special day.

Valentine's Day!

This year we had a very low key Valentine's Day with our newest family addition :) We had some really good family time together and some very delicious eats!

One of my favorite things to get to eat at Belford's Restaurant in Savannah, GA was their Baked Brie en Croute so tonight I attempted to recreate it as best I could... And it was very tasty if I do say so myself! 

Baked Brie en Croute with Honey and Walnuts
Puff Pastry Wrapped Brie with Honey and Walnuts

  • Ingredients:
    1/2 of a 17.3-ounce packagePepperidge Farm® Puff Pastry Sheets (1 sheet), thawed according to package directions
  • 1 (8-ounce) Brie cheese round

    1/4 c. walnuts

    2 tbsp. honey
  • egg
  • 1 tbsp. water

  1. Heat the oven to 400°F. Unfold the pastry sheet on a lightly floured surface. Mix honey and walnuts and put in center of pastry. Place the cheese on top of honey mixture. Fold the pastry up over the cheese to cover. Trim the excess pastry and press to seal. Reserve the pastry scraps for decoration.
  2. Beat the egg and water in a small bowl with a fork or whisk. Brush the seam of the pastry with the egg mixture. Place seam-side down onto a baking sheet. Decorate with the pastry scraps, if desired. Brush with the egg mixture.
  3. Bake for 25 minutes or until the pastry is golden brown. Let stand for 30 minutes before serving.

Snow Day!

Today was my baby's second snow day since his birth! His first snow day where he was actually awake and alert. I can't say for sure if he really enjoyed himself, but his parents and puppy dog sure did! :)

3 Months Ago Yesterday...

My sweet baby boy was born!

I can't believe its already been 3 months! It was a tiring and difficult start figuring out this whole parenting thing.... from the extremely long labor process (over 30 hours), to a week in the hospital secondary to my baby's jaundice and my complications with preeclampsia/protein urea post-delivery, to the struggles with breastfeeding with two cases of mastitis, and of course, sleep deprivation. But once I figured out my baby and I were MUCH happier with bottle vs. breast, and pumping vs. nursing, a weight was lifted and I was able to enjoy being a mom so much more! Now I have mastered pumping (been going strong for 2 months and today met my goal of making it to at least his 3 month mark) and my baby is growing, thriving and sleeping through the night (anywhere from 5-8 hours a night)! He smiles constantly and melts my heart every time! He is such a happy baby and really only cries or fusses when he's hungry, tired, or when he needs his diaper changed. He is much more alert now and loves to go on tours of the house. We try to point out what everything is and he really looks and follows your finger like he knows what we are saying. He found his hands last week and loves to chew and suck on them. He found his knees today, so I'm sure it won't be long before he finds his little piggies!

"He looks just like you!"

Like any new parent, my husband and I have gotten that comment a lot with our son... sometimes people say it to me, and sometimes to my husband. The general consensus is that our baby has my husbands eyes and my nose and lips. But we still weren't convinced. Personally, I think he's a good blend of both of us, but its still hard to tell at this age who he is going to look more like. So I got busy looking through some of our baby pictures to compare. The verdict: our baby definitely has my nose... everything else, well, see for yourself....

Kale: Could it be my new favorite veggie?

One of my new favorite shows that I DVR daily is "The Chew." It is informative, funny, and very helpful in finding new recipes that my family ends up loving. One ingredient they speak of and use often is the vegetable kale. I have always heard of it but never thought to try it until this week when I went to the commissary and there it was! I decided, "hey, why not give it a whirl!" Given, I had no idea how to cook it but thats what google is for, right? So I googled "kale recipes" and the most popular results had to do with Kale Chips. Last night I tried one of the recipes and it turned out awesome! My husband and I were both were very pleasantly surprised by the result. 


Crispy Kale Chips 


INGREDIENTS:
1 bunch kale
1 tablespoon olive oil
1 teaspoon seasoned salt
1 teaspoon red pepper flakes
DIRECTIONS:
1.Preheat an oven to 350 degrees F (175 degrees C). Line a non insulated cookie sheet with parchment paper.
2.With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale with a salad spinner. Drizzle kale with olive oil and sprinkle with seasoning salt and red pepper flakes.
3.Bake until the edges brown but are not burnt, 10 to 15 minutes.


These Kale Chips turn out to be so extremely crispy and delicious and literally melt in your mouth. After last night if you were to offer my kale chips or potato chips I would choose kale chips every time!

Here are a few other things to do with Kale:

Quick cooking preserves kale's nutrients, texture, color, and flavor. Rinse kale, chop it finely, and add it soups, stews, stir-frys, salads, egg dishes, or casseroles. Or top pizzas with kale for added nutritional goodness. Steam kale for five minutes to make it more tender or eat it raw. You can also substitute it for spinach or collard greens in recipes.
Other fast and easy ways to prepare kale:
  • Make a simple salad with a bunch of thinly sliced kale, red pepper, onion, raisins, and your favorite salad dressing.
  • Braise chopped kale and apples, garnish with chopped walnuts, and add a splash of balsamic vinegar.
  • Toss whole-grain pasta with chopped kale, pine nuts, feta cheese, and a little olive oil.
  • Cover and cook a pound of chopped kale with a few garlic cloves and 2 tablespoons olive oil for 5 minutes; season with salt, pepper, and a tablespoon of red wine vinegar.
  • Make kale chips by slicing kale into bite-size pieces, toss with a drizzle of olive oil and a pinch of salt, and bake for 10-15 minutes at 350 degrees in the oven.

Vitamin K is abundant in kale but also found in parsley, spinach, collard greens, and animal products such as cheese.
Vitamin K is necessary for a wide variety of bodily functions, including normal blood clotting, antioxidant activity, and bone health.
But too much vitamin K can pose problems for some people. Anyone taking anticoagulants such as warfarin should avoid kale because the high level of vitamin K may interfere with the drugs. Consult your doctor before adding kale to your diet.
Kale might be a powerhouse of nutrients but is also contains oxalates, naturally occurring substances that can interfere with the absorption of calcium. Avoid eating calcium-rich foods like dairy at the same time as kale to prevent any problems.
So next time you're at the grocery store and see Kale in the Veggie section, grab some and cook it up for dinner!

The Start of Something New



I've always enjoyed reading other people's blogs so I decided it was time to attempt my own. Now I can't promise that it will be interesting or that I will keep it up daily, but I'm going to do the very best I can. I figure if for no other reason, it's a good way to get things out of my head... sometimes it gets crowded up there with so many thoughts, tasks, plans, recipes, etc.

So here goes:

I have been reading a new book, "Ketchup is a Vegetable and Other Lies Moms Tell Themselves" that I got from my cousin for Christmas. It is a hilarious take on the insights into motherhood. I highly recommend it for any mom!

My favorite part in the entire book so far is when she discusses her breastfeeding struggles. They are extremely similar to what I experienced breastfeeding my new baby for the first 5 weeks. It especially hit close to home when she relates to nursing her baby as attempting to nurse a grizzly bear.... I know the feeling all too well. Breastfeeding really isn't all its cracked up to be. Thus the reason I have been exclusively pumping for he past 6 weeks. My baby loves his bottle and hates his mommy's breasts. Oh well. At least he is still getting the benefit of breast milk and I have the benefit of actually enjoying feeding my little man without crying and cringing from pain. My goal was to feed him breast milk exclusively until he was 3 months and then see how much longer I can make it pumping exclusively. Well, he turns 3 months tomorrow and even though I've had mastitis twice, I'm still going strong pumping and I've got a freezer full of stored milk. So I already consider it a victory and any amount of time I can continue to pump after tomorrow is just a bonus! But I will say my next mini goal is to make it until he is 4 months... we shall see how that goes. Some days I'm ready to quit because I feel like I have no time to myself between pumping, feeding baby boy, feeding myself, feeding my dog, cooking dinner, doing dishes, washing bottles/pumping equipment, entertaining my baby, entertaining my dog.... but I'm slowly starting to get the hang of it... I think, rather, I hope (case and point, I did start a blog so I must have a little extra time on my hands now). Only time will tell.
